Baked Turkey Chimichanga
5 ounces extra-lean ground turkey
1 pinch each of salt and ground black pepper
1⁄2 cup fresh salsa
2⁄3 cup fat-free refried black beans with jalapeño chile peppers
2 tablespoons canned diced green chile peppers
Nonstick cooking spray
2 large whole wheat tortillas
1⁄4 cup fat-free sour cream
Preheat the oven to 375°F.
Cook the turkey with the salt and pepper in a nonstick pan until almost done.
Add the salsa, beans, and chile peppers and cook off any liquid from the salsa.
Spray a baking sheet with cooking spray and lay the tortillas out flat.
Pour half of the turkey mixture into the center of each tortilla, and roll up like a burrito.
Bake for approximately 10 minutes or until slightly crispy.
Serve with the sour cream.
