God Turned a Single Mom’s Struggle into a Dream Café

Erika is a single mother raising two children outside Mexico City. She makes money by selling snacks at a toll booth on a busy highway. It’s a job that constantly puts her at risk.  “I would NOT want to do this forever, because I know it is risky,” she told us.    

And the little money she earns is not enough even to pay for the basics.  “I've been able to cover some of my children's expenses, but medicine and visits to the clinic is not something I can afford.  It’s hard to see them struggle,” said Erika. 

“She didn't tell me anything, but I saw she was stressed,” said David, her young son. 

Erika’s children are concerned about their mom, about her safety and her ability to earn enough for the family.  “I’m grateful to my mom because... (at this moment, she started to cry)…she is a woman who works hard for her children,” said an emotional Allison, Erika’s young teen daughter.      

“I have always wanted to a business where I can be safe, where I can be with my children,” Erika said. “I think about it all the time but don’t have a way to make it happen.”   

“Then thanks to you, Operation Blessing helped Erika open a mobile cafe near her home. The day we arrived with items for the new business, Erika beamed: “It was so unexpected!  I felt so happy!” 

Through Operation Blessing’s Orphan’s Promise program, which helps single moms and vulnerable children, we gave Erika a mobile stove, table, stools, pots, bowls and utensils to start the cafe. We also taught her how to buy, sell and save.   

“I am very happy for my mom and I am thanking God for helping us,” said David. “It brought tears to my eyes.”   

Now, Erika sells quesadillas on a busy commercial sidewalk in a much safer place.   She earns enough to keep the business going AND provide for the needs of her children.    

“My mom now has regular customers, and they call her “the quesadilla lady!” said Allison. 

“I thank God and the people who helped us for giving me hope---a LOT of hope,” said Erika.  “Thank you.”
