Brittany Williams shares how eliminating processed food from her diet helped her lose 125 pounds.

Brittany Williams wenton Facebook to share
how a cooking pot had changed her life.
Well, that post wentviral, and as they say,
"The rest is history."
Take a look.
- [Narrator] Best-sellingauthor, Brittany Williams,
struggled with her weightand yo-yo dieting for years.
When her four-year-olddaughter was diagnosed
with rheumatoid arthritis,Brittany began researching
anti-inflammatory foodsto help her get better.
Making those meals notonly helped her family,
but Brittany startedlosing weight, quickly.

Brittany shares how makingquick and easy meals
using wholesomeingredients in her InstaPot
helped her lose 125 pounds.
- Please welcome to the 700 Club,
the InstaPot queen, Brittany Williams.
Does anybody call you that?
- Sometimes, thanks for having me, yeah.
- So let's look at this is an InstaPot.
I don't have one of these,but I hear they're amazing.
This all started--
You asked your husbandfor one for Christmas?
Did you want it or you--?
- I wanted a stove-top pressure cooker.
You know, one of those
- [Both] (speaking together)old fashioned kinds?
- [Terry] Yes.- I didn't even know
electric pressure cookers existed.
My husband did a lot of research,
and he found one of these on Amazon.
- [Both] (laughing together)
- And he brought it home,and I looked at the box and--
- Kinda sat there for awhile.- Put it away.
Yeah, I put it away because I was like,
"I can't do one more thing.
"I'm a busy mom."- [Terry] I hear ya.
I had two kids, I was pregnant
with another baby at that time--
- It's a lotta buttons?
You gotta--- So many buttons.
I'm like, how does anybodylearn how to do this?
But, he told me, "I'm gonna return it,"
'cause it was a lot of money,
and back then, it was.
Now you can get one for like, $50,
but back then, it was$125, and so I decided,
"You know what?
"I'm just gonna try my hand at it.
"I'm gonna cook a cup of rice.
"If I fail, it was only like what?
"Fifteen cents?"
Not a big deal.
- And the big deal aboutthis is it does it fast,
and it does it well,so you cooked the rice,
the rice was perfection,right? (chuckling)
- It was perfection andit was so much faster
than the stove-top.
- So why, how did doingthis cause the weight loss?
125 pounds is a lot of weight to lose.
What were you doing beforethat the InstaPot solved?
- I think that one of my biggest excuses
for not eating healthy wasthat I didn't have the time.
And I'm kind of a procrastinator.
I'm very artistic.
And I like to move when themovement moves me, you know?
- [Terry] (laughing)
- But what I learned was that
you sometimes have to have discipline,
and it can't always bebased off of motivation.
And so this kind of solved my time issue,
because unlike with aconventional crock pot
or a slow cooker, youdon't have to plan ahead.
You can throw frozeningredients right into the pot.
It cooks them very, very fast,
and you're gonna have dinner on the table
in under 30 minutes.
- So what other changesdid you make in your diet
at that point?
- So when we first started this,
we went on an auto-immune protocol diet,
which is an anti-inflammatory diet.
You get rid of grains andnightshades, and dairy,
and anything that can causeinflammation in the body,
'cause my daughter was struggling
with an auto-immune disease.
But you only do a diet likethat for a period of time
and then you can beginadding things back in
to see if the person has any triggers.
So "Instant Loss" is kindof the results of that.
We began to add things back into our diet,
so it's not all anti-inflammatory,
but many of the foodsare anti-inflammatory
and they're very high
in foods that are going to have those
anti-inflammatory properties.
- So, let's look at whatyou're gonna make here, today.
This is chicken.
- This is chicken, sothis is chicken tenders.
You can also use chicken breasts.
And they're just cut into pieces.
I'm just gonna kind of pourit all in the pot, there.
I'm gonna show you howquick and easy this is.
So this is Salsa Verde,it's a green salsa.
You just throw that in there, as well.
And then we have some red salsa.
Dump it in.
And then this is myhomemade taco seasoning.
- Whoo!
- Store bought taco seasoningscan have anti-caking agents,
they can also have lots ofsugar, so I prefer to make my own
at home, and these are gonna be spices
that you usually already have on-hand.
Then you're just gonna seal lock the pot,
make sure that the vent valveis in the sealing position,
and then you're just going to program it
and it's gonna do its thing.
- And how long would that take?
- This is gonna take under 30minutes from start to finish.
- Really?- Yes.
- Wow, that's--
- And you can use frozenchicken breasts, as well.
- So we have, because it'sthe magic of television,
we have the finished product, here.
I want you to see if this--
I mean this is big.
You could feed a lot of people with this.
- Absolutely.- So, here you've got
the chicken now cooked.- Yep, it's all cooked.
It's all shredded up.
It shreds so nicely.
It's gonna be just falling apart
when you take the lid off of the pot.
I like to shred mine with a hand mixer.
It kinda makes thingsa little bit more fun,
and then you're not--
- You don't have to--- Machinery.
- Work your arms as much, you just zoop.
- Okay, so we're gonnamake chicken tacos, here.
Let's look at what we have.- These are
homemade tortillas.
I have this recipe in my book
"Instant Loss: Eat Real, Lose Weight".
- Oh, this is awesome.- Yeah, they're
very yummy, very flexible.
I'm gonna grab a plate here,
and then we're just going to top it
with a little bit of chicken.
And my family isdairy-free, well half of us
are dairy-free, and theother half eat dairy.
So everything in thebook is dairy-optional.
- I'll hold this for you.- So, you can
of course, put cheeseon this, if you'd like.
- You're putting my favorite.- I'm just gonna
top it, yeah, with some--
- A little guacamole.- Yummy guacamole.
We're gonna do a little bitof lettuce on the side, here.
And then of course, we havea little bit of extra salsa.
I like my stuff spicy.- Delicious looking.
Mm, mm, mm.
There's the finishedproduct up there in front,
but this is all so fresh.
Let's move back down here, because I know
I want people to seesome of the other things
you're able to make.
This is a carrot-mango smoothie?
- That's right, yeah!- Is that right?
- That's right, so if I'm doingsomething like chicken tacos
and I know I'm gonna be eatingsomething that's a little bit
more starchy, carbohydrate-heavyfor dinner or lunch,
I'm gonna do something likea smoothie for breakfast.
It's just a little bit lighter.
I don't wanna have threeheavy meals in a row.
So I do a lot of smoothies.
This one just has some mango,carrots, coconut water.
- [Terry] Okay.- Very, very simple.
- [Terry] This is beautiful, the salad.
- This in an autumn arugula salad.
I call it an autumn salad'cause it has a lot of those
- [Terry] Veggies fromthe Fall? (chuckling)
- [Brittany] That's right,and I like to buy seasonally.
I find that I can keep mybudget costs down a lot
when I buy seasonally.- [Terry] Awesome!
That is gorgeous.
Then moving over here, wellif we saw the chicken tacos,
and what is this?
- [Brittany] That's calledmy lazy day minestrone soup.
It's great because you don't have to have
any fresh ingredientson-hand for this soup.
So, it's awesome for those nights
where you don't haveanything in the refrigerator
or things maybe sat inthere a little bit too long.
Just open up therefrigerator, pull out a bag
of frozen mixed veggies, alittle bit of gluten-free pasta,
and this comes togetherin under 15 minutes.
- Wow, and then you're notsaying we can't have dessert.
This looks pretty wonderful, actually.
Tell me about this.
- People ask me what to do whenyou have cravings for things
and I say, "Feed 'em."
- [Both] (chuckling)
- [Terry] I like that.- Feed your cravings.
So this is my lemon crumb Bundt cake.
It is gluten-free, grain-free, dairy-free,
all the frees, and it'sabsolutely wildly delicious.
I noticed that before, when I was dieting,
and I would restrict myself,
a lot of times that wouldlead to larger binge cycles
because you feel like,"Well, I can't have it,"
and that just makes you want it more.
- [Both] (chuckling together)
- And I had to get outta that mindset.
- It's beautiful.- And so when I
ditched the diet, and I stopped dieting,
and I just started focusingon real food content,
I could eat anything I wanted.
- You know, I want to saythis is a really fun cookbook
to go through.
